Spinach & Banana Muffins

A great way to add Vit A in your kids muffins, ideal for a school snack box.

INGREDIENTS

1 ½ cup gf all purpose flour

1 tbsp baking soda

½ tbsp salt

1 tbsp cinnamon powder

1 tbsp chia seeds

2 large banana’s

A bunch of spinach leaves

½ cup oil

1 egg

½ cup jaggery

2 tbsp brown sugar

1 tbsp vanilla

METHOD

Preheat the oven to 350 degree C.

Prepare a loaf in with greaseproof paper or muffin trays with a liners.

Combine a all the dry ingredients the flour, baking soda, salt, cinnamon.

In a blender blend spinach leaves, banana, oil, jaggery and egg.

Pour the wet ingredients into the dry ingredients and just combine.

Bake the muffins for 18 minutes or loaf for 30 minutes.

Tips :

Using alternate sugars like palm sugar, coconut sugar give this muffin a healthy touch.
