This cake is version of Nigella Lawson’s Chocolate Olive Oil Cake just gluten free.

INGREDIENTS
150 ml oil
30gms cocoa powder
150 ml boiling water
150gms all purpose gf blend
½ tbsp baking soda
Pinch salt
200gms castor sugar
3 large eggs
1 tbsp vanilla extract
METHOD
Preheat oven to 170 degree C
In a jug sieve the cocoa powder add boiling water and whisk continuously until you have a smooth paste. Add the vanilla extract.
Sieve the gf all purpose flour blend with baking soda and salt.
Beat the sugar, eggs, oil vigorously to create a pale blend in with a handheld or freestanding mixer.
Add the coca mixture while beating and finally add the flour in three batches beating at a slow speed.
Bake for 40-45 minutes till centre comes out clean.
Cool the cake and demould the cake.
Tips :
Replace zucchini with banana puree, apple puree or tangerine stewed and pureed.
