Lemon Avocado Cheese Cake

A simple cheese cake added with a fruit and a gluten free base is a complete delight.

INGREDIENTS

15 gluten free cookies

2 tbsp butter, melted

1 cup mashed avocado

4 (8 ounce) packages cream

cheese

1 ½ cups white sugar

2 tbsp lemon juice

1 tbsp lemon rind

½ cup milk

4 eggs

1 cup sour cream or hung yogurt

¼ cup all purpose gf flour blend

METHOD

Preheat oven to 175degree C. Grease a 9 inch spring form pan and cover it with silver foil.

In a medium bowl, make crumbs of the cookies with melted butter. Press onto bottom of spring form pan and bake for 10 minutes.

In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Add the pureed avocado

Mix in sour cream/hung yogurt, lemon juice and rind finally the flour until smooth. 

Allow the cookie crumbs to cool and then pour filling into prepared crust.

Place the spring form in a water bath and place that pan into the oven.

Bake in preheated oven for 1 hour. 

Turn the oven off, and let cake cool in oven with the door closed for an hour and an hour on the wire rack. Chill in refrigerator until serving.

Tips :

Avocado can be replaced with any pureed fruit.

A brownie base is a lovely option instead of the cookie base.
