PANCAKE MIX
1 1/4 CUP
EGGS OR
EGGS REPLACER*
OIL
MILK
VANILLA
EXTRACT
1 EGG
1 CUP
1 TEASPOON
1 TABLESPOON
Pancakes:

HEAT griddle and lightly grease it or pan over medium heat.

WHISK Egg or egg replacer with oil, milk and vanilla extract.

MIX flour mixture till the mixture firms up slightly into the milk mixture. If it is lumpy add a bit more milk to make it a smooth pouring consistency.

POUR 1⁄4 cup portions onto the hot griddle or pan.

COOK until bubbly, then flip and let cook until done, about 2-3 minutes per side.

SERVE immediately.
Waffles:

PREHEAT waffle iron to medium heat for at least 10 minutes.

MIX together all ingredients same as above adding additional 1⁄2 cup milk.

FOLLOW waffle iron manufactures instructions for measuring and cooking waffle.
OPTIONS: TO MAKE EGG RE-PLACER* FOR 1 EGG:
Mix 1 tbsp chia seeds/flax seed powder with 3 tbsp of water and let sit for 15 min or 40 ml coconut milk.
